As many of you know I am a chocolate freak. I recently went a week without it and oddly didn’t miss it. I was traveling and decided it was either a glass of wine or chocolate on my vaca. I have lapsed back into my old habits upon my return and I thought I’d share a favorite recipe with you. It’s gluten free and low glycemic so enjoy a guilt free decadent dessert! Here it is- Oh- and I should mention that my friend Pearl made it up. She’s a fabulous cook!
Dark Choco-nutty Drop Cookies (or bars)
For the bars, I use Dagoba 100% choc bars. I imagine you could use powder
and it would be a chocolate batter, instead of chocolate chunks and nut
butter. Here is the recipe again. You may want to use 2 eggs. The last batch
I made I used 2 and it helped it rise a bit more. I also found that an 11 by
7 inch pan works best.
1 cup of nut butter
3/4 cup of natural sweetener (agave)
1 tsp vanilla (or almond extract)
1-2 eggs beaten or 1 TBS flax oil whisked with 3 TBS water
1/2 tsp baking soda
1/4 tsp salt
3 ounces of 100% dark chocolate pieces
Preheat oven to 350. Combine first 6 ingredients and optional ingredients.
Stir until mixed. Add chocolate pieces. Spread out onto baking pan Bake about 20 minutes.
